The ‘novelty & ‘leaky-bucket’ issues are well understood, thanks - in fact, it becomes damn clear when one reviews one’s own behaviours to going out. A question though - given the huge population we have, rising affluence - more so in the urban centres - and a high intention of ‘social display’, wouldn’t they act as a counter to the leaky bucket theory and increase the ratio of success for the ‘better’ restaurants ? I see quite a few restaurants (in my city) in business for years, even though we were a part of the ‘leak’ a long time back for most such places.
