Interesting history and with the additional information of why and how the processing with chemicals ended up with white crystals of sugar, would make it more complete.
I think the entirety of human civilization is a rapidly accelerating journey towards mass-making things that make us feel good, to the point it starts killing us. Sugar, entertainment, comfort, etc.
And now finding something with no added processed sugar is akin to a miracle
