Great suggestions, thanks! A quick question about microwaving: though convenient and nutrient preserving, I remember reading in Readers Digest that it increases AGE proteins (advanced glycation end products) in foods, which is definite downside. I agree that vegetables have limited proteins, but what’s your take on this? Is microwaving safe overall,AGE or not?

Microwaving is safe overall. Every cooking method produced AGEs, but the same is relatively less in case of microwaving due to short cooking time and controlled temperatures even though it is a dry from of cooking.
